The discovery that frozen bananas, when blended past the point where you think they're going to cooperate, turn into actual ice cream is one of those things that shouldn't work but does. No dairy, no sugar, no ice cream maker; just bananas and a powerful blender or food processor. The base is naturally sweet and creamy, and it takes to mix-ins like a blank canvas. We're giving you five variations here because once you nail the base technique, you won't be able to stop. The key is using bananas that are very ripe (spotted, bordering on brown) before you freeze them. Underripe bananas make sad, chalky nice cream. Don't do that.

Ingredients

For the base nice cream:
  • 4 very ripe bananas, peeled and sliced into ½-inch rounds, then frozen solid (at least 4 hours, ideally overnight) — peel and slice before freezing; frozen-solid bananas are extremely difficult to peel

For Chocolate-Peanut Butter: (not paleo-friendly)

  • 2 tablespoons natural peanut butter
  • 2 tablespoons raw cacao powder
For Strawberry-Coconut:
  • 1 cup frozen strawberries
  • 2 tablespoons coconut cream
For Mango-Lime:
  • 1 cup frozen mango chunks
  • Zest and juice of 1 lime
For Mint-Cacao Chip:
  • ¼ teaspoon peppermint extract
  • 3 tablespoons cacao nibs (cacao nibs stay crunchy, which is the intention — if you prefer a softer chip, substitute dairy-free chocolate chips)
For Caramel Date Sauce:
  • 4 Medjool dates, pitted
  • ¼ cup hot water (or more as needed), plus extra for soaking
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Method

  1. Place the frozen banana slices in a food processor or high-powered blender. Process for 30 seconds, it'll look crumbly and wrong. Keep going.
  2. Scrape down the sides and process again for another 60–90 seconds, or up to 3 minutes total, scraping as needed. The bananas will go through a phase where they look like chunky rubble, then suddenly transform into a thick, creamy, soft-serve consistency. The mixture is ready when it has the smooth consistency of soft-serve and no frozen chunks remain. This is the moment. Stop here.
  3. For your chosen variation, add the mix-in ingredients to the food processor and pulse 10–15 times until just combined. For the Caramel Date Sauce variation: first soak the pitted dates in hot water for 10–15 minutes, then drain, reserving the soaking water. Blend the soaked dates with ¼ cup of the reserved soaking water (add more water as needed for a smooth, pourable consistency), vanilla, and salt until completely smooth. Swirl it into the finished nice cream.
  4. Serve immediately for soft-serve texture, or transfer to a freezer-safe container and freeze for 30 minutes for firmer, scoopable nice cream. If frozen longer than an hour, let it sit at room temperature for 5–10 minutes before scooping.

Variations & Notes

  • Base flavor boosters: A splash of vanilla extract, a pinch of cinnamon, or a tablespoon of honey in the base nice cream elevates everything (honey isn't vegan — maple keeps the tag — and skip it if anyone under one is getting a taste; the plain banana base is already baby-friendly).
  • Protein boost: Blend in a scoop of vanilla or chocolate protein powder with the base bananas.
  • Strawberry note: The Strawberry-Coconut variation may produce a softer, slightly icier texture than the other variations, as frozen strawberries release more moisture. For a thicker result, freeze the finished nice cream for 30–45 minutes before serving, or reduce the base to 3 bananas when adding 1 cup of strawberries.
  • Toppings: Toasted coconut flakes, chopped nuts, cacao nibs, a drizzle of tahini, granola from the Snacky section, or a swirl of the Strawberry-Basil Chia Jam → see recipe all work.
  • Extra Hungry: Double the base recipe, go heavy on toppings, and serve in a proper bowl. This is a full dessert.
  • Storage: Best eaten immediately. Will keep for up to 1–2 weeks frozen, though best quality is within the first few days. Texture becomes progressively icier with longer storage. Needs 10–15 minutes at room temperature before serving.
