Baked Cinnamon Apples Stuffed with Walnut-Date Crumble
This might be the best smell a kitchen can produce. Not the best food that comes out of an oven, although it's up there — the best smell. Cinnamon, warm apples, toasted walnuts, and melted coconut oil merging into something that makes the entire house feel like fall regardless of the actual season. These are whole apples, cored and stuffed with a crumble of walnuts, dates, oats, and spices, then baked until the apples collapse into tender sweetness and the filling turns golden and crunchy on top. Serve them warm. With a spoon. Optional: a scoop of coconut yogurt.

Ingredients
For the stuffed apples:
- 4 large baking apples (Granny Smith, Braeburn, or Honeycrisp — if using Honeycrisp, begin checking for doneness at 30 minutes)
- ½ cup walnuts, roughly chopped
- 4 large Medjool dates, pitted and finely chopped
- ¼ cup old-fashioned rolled oats (use certified gluten-free oats if needed)
- 2 tablespoons coconut oil, melted
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- Pinch of fine sea salt
- ½ cup water
For serving (optional):
- Coconut yogurt or a drizzle of raw honey
Method
- Preheat your oven to 375°F (190°C).
- Using a paring knife and a spoon or melon baller, core each apple from the top, creating a well about 1½ inches wide and leaving the bottom intact. You want a generous cavity for the filling without breaking through the base.
- In a medium bowl, combine the chopped walnuts, dates, oats, melted coconut oil, cinnamon, nutmeg, and salt. Stir and press together until the mixture is sticky and clumps when squeezed.
- Stuff each apple generously with the walnut-date crumble, mounding it slightly above the top. Pack it in firmly — it will settle as it bakes.
- Place the stuffed apples upright in an 8×8-inch baking dish or small oven-safe skillet. Pour the water into the bottom of the dish. This creates steam that helps the apples cook evenly without drying out.
- Bake for 35–40 minutes, until the apples are tender when pierced with a knife and the crumble topping is golden and fragrant. The skins will wrinkle and the apples will slump slightly — that's perfect.
- Let cool for 5 minutes, then serve warm, spooning any juices from the pan over the top. Add a dollop of coconut yogurt or a thin drizzle of honey if desired.
Variations & Notes
- Pecan swap: Pecans work beautifully in place of walnuts for a slightly sweeter, butterier flavor.
- Cranberry addition: Toss 2 tablespoons of dried cranberries into the filling for color and tartness.
- Extra Hungry: Serve over a bowl of warm oatmeal for a breakfast-dessert hybrid that fuels a long morning.
- Paleo-Friendly Adjustment: Skip the oats and replace with an extra 2 tablespoons of chopped nuts and 1 tablespoon of unsweetened coconut flakes.
- Storage: Best within 2 days — the texture softens considerably after day one: still delicious, just less defined. Reheat in a 325°F oven for 10–12 minutes. The microwave works but makes the crumble less crispy.
- Gluten-free note: This recipe is gluten-free when certified gluten-free oats are used. Standard rolled oats are often processed in facilities that handle wheat and pose a risk for celiac readers.
