This chapter exists for the recipes that sound questionable in the abstract and surprisingly convincing once they actually hit the plate. The standard here isn't novelty for its own sake. The standard is whether the result is genuinely worth eating, useful, or memorable enough to earn a place in the book at all.

Some of what's ahead started as an unlikely pairing or a substitution that shouldn't have worked. A few are the kind of thing you'd hesitate to explain before someone tastes it. Others are simply combinations most people wouldn't think to try, until they do, and then can't stop making them.

We didn't include anything here because it was strange. We included it because it passed the only test that actually matters in our kitchen: we kept making it, on purpose, long after the novelty wore off.

These are the recipes that tend to become the ones people ask us for by name, the ones friends remember months later and want again.
