This chapter isn't about pretending dessert is something else in disguise. It's about making desserts and treats with ingredients we genuinely like cooking with, in combinations that still feel generous, indulgent, and worth the occasion.
Fruit, nuts, yogurt, dark chocolate, coconut, dates, honey, and maple syrup show up often in what follows, not because dessert needs some kind of moral defense, but because those ingredients simply make very good dessert on their own terms, without needing to announce themselves as a health swap.
We're not interested in a thin, diet-food version of a classic treat, the kind that leaves you a little disappointed and reaching for something else twenty minutes later. What we're after is dessert that happens to be built mostly from whole-food ingredients, and still tastes rich enough, sweet enough, and satisfying enough to actually be the last thing you eat.
