
Turkey and Vegetable Stir-Fry with Cauliflower Fried Rice
This is Kiana's stealth-health masterpiece. It looks and tastes like takeout fried rice, gingery, savory, a little sweet (that's the coconut aminos doing their thing), but the "rice" is cauliflower and the protein is lean ground turkey. The trick is to cook the cauliflower rice hard and fast so it gets a little color and stays put. Snap peas and bell pepper add crunch, sesame oil ties it all together, and nobody at the table needs to know how many vegetables they just ate. We've served this to people who insist they hate cauliflower. They asked for seconds.

Ingredients
For the stir-fry:
- 1 pound ground turkey
- 4 cups riced cauliflower (fresh or store-bought, grated)
- 1 cup sugar snap peas, trimmed and halved on a bias
- 1 medium red bell pepper, diced
- 3 green onions, thinly sliced (whites and greens separated)
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, finely grated
- 2 large eggs, lightly beaten
- 3 tablespoons coconut aminos (or low-sodium tamari)
- 1 teaspoon toasted sesame oil
- 1 tablespoon avocado oil
- 1 teaspoon rice vinegar
Method
- Heat the avocado oil in a large skillet or wok over high heat until it just starts to smoke.
- Add the ground turkey and break it apart with a wooden spoon. Cook without stirring for 2 minutes to let it get some color, then break it up further and cook until no longer pink and a thermometer inserted into the thickest portion reads 165°F (74°C), about 3–4 minutes total. Transfer to a plate.
- In the same pan (still over high heat), add the snap peas, bell pepper, and green onion whites. Stir-fry for 2 minutes: you want the vegetables crisp-tender and bright, not soft.
- Push the vegetables to the edges of the pan. Add the garlic and ginger to the center and cook, stirring, for 30 seconds until fragrant.
- Add the riced cauliflower and spread it in an even layer. Let it cook undisturbed for 2 minutes to get some char on the bottom. This step is what separates good cauliflower rice from sad cauliflower mush. Stir once, then let it sit another minute.
- Make a well in the center of the pan and pour in the beaten eggs. Scramble the eggs in the well for about 45 seconds, then fold them into the cauliflower and vegetables.
- Return the turkey to the pan. Pour in the coconut aminos and rice vinegar. Toss everything together and cook for 1 more minute.
- Remove from heat, drizzle with the sesame oil, and scatter the green onion greens on top. Serve immediately.
Variations & Notes
- Vegan Swap: Replace the turkey with 1 block of extra-firm tofu, crumbled, and the eggs with an additional ½ cup of diced vegetables (mushrooms are great here). Use the same sauces.
- Paleo-Friendly Adjustment: Already paleo-friendly with coconut aminos. Skip the rice vinegar if you're strict.
- Extra Hungry: Serve over a bowl of steamed jasmine rice alongside the cauliflower rice: half real rice, half cauliflower rice is Adam's compromise.
- Substitutions: Ground chicken works interchangeably. Broccoli florets (cut small) can replace snap peas. Regular soy sauce works in place of coconut aminos if gluten isn't a concern. - Storage: Keeps in the fridge for 3 days. Reheat in a hot skillet (not the microwave: you want to restore some of that char).
