Ground lamb cooked with warm spices, cumin, coriander, cinnamon, piled over roasted sweet potato, flanked by a bright cucumber-tomato salad, and topped with a harissa yogurt that pulls everything together. Ingredients
For the spiced lamb:
- 1½ pounds ground lamb
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1½ teaspoons ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon ground cinnamon
- Salt and freshly ground black pepper
For the roasted sweet potatoes:
- 2 large sweet potatoes, cut into ¾-inch cubes
- 1 tablespoon extra-virgin olive oil
For the cucumber-tomato salad:
- 1 English cucumber, diced
- 1 cup cherry tomatoes, halved
- 3 tablespoons fresh lemon juice, divided (2 for salad, 1 for yogurt)
- 2 tablespoons fresh mint, chopped
For the harissa yogurt:
- ½ cup plain Greek yogurt (full-fat)
- 1½ tablespoons harissa paste
Method
- Preheat your oven to 425°F (220°C). Line a rimmed sheet pan with parchment paper.
- Toss the sweet potato cubes with olive oil and a generous pinch of salt. Spread in a single layer on the sheet pan. Roast for 25–30 minutes, tossing every 10 minutes for even caramelization, until golden and tender when pierced with a fork.
- While the sweet potatoes roast, heat a large skillet over medium-high heat. Add the ground lamb and break it into small pieces with a wooden spoon. Cook for 5–6 minutes until browned and deeply colored with no pink remaining (ground lamb is done when it registers 160°F / 71°C on an instant-read thermometer). If more than 2 tablespoons of fat have accumulated in the pan, tilt the pan and carefully drain the excess, leaving about 1 tablespoon behind.
- Add the onion and garlic to the lamb and cook for 5 minutes until the onion is completely softened and sweet. Stir in the cumin, coriander, and cinnamon and cook for another minute until fragrant. Season with salt and pepper to taste.
- Make the cucumber-tomato salad: toss the cucumber, cherry tomatoes, 2 tablespoons of the lemon juice, and mint together in a bowl. Season with a pinch of salt.
- Make the harissa yogurt: stir together the Greek yogurt, harissa paste, and remaining 1 tablespoon lemon juice in a small bowl until smooth. Double the batch if you prefer a saucier bowl.
- Assemble the containers. Divide the roasted sweet potatoes among four meal-prep containers. Add the spiced lamb alongside. Tuck the cucumber-tomato salad into a separate section (or a small container to keep it crisp). Add a generous spoonful of harissa yogurt on top or in a small side cup.
Variations & Notes
- Grain option: Add ½ cup cooked quinoa or cauliflower rice → see recipe to each container for extra volume.
- Dairy-free swap: Replace the harissa yogurt with a tahini sauce: ¼ cup tahini, 2 tablespoons lemon juice, 2 tablespoons water, and ½ teaspoon harissa stirred until smooth.
- Leaner version: Swap the ground lamb for ground turkey. You'll lose some richness: compensate by adding 1 tablespoon olive oil when browning and increasing the spices slightly.
- Extra Hungry: Add a handful of roasted chickpeas or increase the sweet potato to 3 large potatoes. Adam adds both.
- Storage: Assembled containers: 4 days refrigerated. The cucumber-tomato salad is best for 2–3 days: it gets watery beyond that, so you may want to prep a fresh batch midweek. The lamb and sweet potatoes freeze well separately for up to 2 months.
