
Slow Cooker Pulled Chicken (Multiple Meal Base)
One batch of pulled chicken turns into three completely different dinners, which is the closest thing to a cheat code that meal prep offers. You load up the slow cooker on Sunday morning, walk away for six hours, and by dinner you have about six cups of tender, well-seasoned shredded chicken that becomes tacos on Monday, grain bowls on Tuesday, and stuffed sweet potatoes on Wednesday. We give you the three complete "builds" below so you don't have to think about it. The chicken itself is seasoned with warm spices and citrus; assertive enough to taste good on its own, neutral enough to pivot in different directions.

Ingredients
For the pulled chicken:
- 3 pounds boneless, skinless chicken thighs
- 1 medium yellow onion, thinly sliced
- 4 cloves garlic, smashed
- 1 jalapeño, halved and seeded (leave seeds in for more heat)
- ¼ cup fresh lime juice (about 2 limes)
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon ground cumin
- 1 tablespoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- ½ cup low-sodium chicken broth
- Salt and freshly ground black pepper
Method
- Season the chicken thighs generously with salt, pepper, cumin, smoked paprika, oregano, and chili powder. Rub the spices into the meat on both sides: don't be shy.
- Layer the sliced onion, smashed garlic, and halved jalapeño in the bottom of a 6-quart slow cooker. Place the seasoned chicken thighs on top in as even a layer as possible.
- Pour the lime juice, olive oil, and chicken broth over the chicken. Cover and cook on low for 6 hours or on high for 3 hours, until the chicken is extremely tender and shreds easily with a fork (internal temperature should read 165°F / 74°C).
- Transfer the chicken to a large cutting board. Shred with two forks: it should practically fall apart on its own. Discard the jalapeño halves (the onion and garlic will have softened into the cooking liquid and can be incorporated).
- Return the shredded chicken to the slow cooker and toss it in the cooking juices until well coated. Taste and adjust salt. The chicken is now ready to portion for three different meals.
- Divide the chicken into three equal portions (about 2 cups each) and store in separate airtight containers.
The Three Builds
Build 1. Monday Tacos: Warm the chicken in a skillet. Serve in corn tortillas with sliced avocado, pickled red onion, fresh cilantro, and a squeeze of lime. Add a side of shredded cabbage tossed with lime juice and salt. Build 2. Tuesday Grain Bowls: Layer cooked quinoa or farro in a bowl. Top with warmed chicken, Roasted Vegetable Medley → see recipe, sliced cucumber, and a generous drizzle of tahini dressing. Build 3. Wednesday Stuffed Sweet Potatoes: Bake four medium sweet potatoes at 400°F for 45–50 minutes until tender. Split open, stuff with warmed chicken, a spoonful of black beans, diced tomato, and a drizzle of hot sauce. Top with a dollop of plain Greek yogurt or mashed avocado.
Variations & Notes
- Vegan Swap: Replace the chicken with 2 (14-ounce) cans of jackfruit, drained, pressed dry, and shredded, and use vegetable broth. Reduce cook time to 4–6 hours on low. The texture mimics pulled meat surprisingly well.
- Instant Pot shortcut: Brown the chicken on Sauté mode for 3 minutes per side, add all remaining ingredients, then cook on Manual/Pressure Cook high for 15 minutes with a 10-minute natural release.
- Extra Hungry: Add a fourth build: chicken quesadillas in a dry skillet with a good melting cheese, sliced peppers, and hot sauce.
- Storage: Refrigerator: up to 4 days. Freezer: 3 months. Freeze in flat, labeled bags for easy thawing. Thaw overnight in the fridge, or in a bowl of cold water, changing the water every 30 minutes.
