
Roasted Cauliflower Steaks with Tahini Sauce and Pomegranate
This is the dish built to convert carnivores — more effectively than anything else in this chapter. A thick slab of cauliflower, roasted at high heat until the cut face is golden and almost nutty, drizzled with lemony tahini and scattered with pomegranate seeds that pop with tart sweetness in every bite. It looks dramatic on a plate, which doesn't hurt. The key is the thickness; you want proper steaks from the center of the head, not florets. The flat surface is what gives you that gorgeous sear.

Ingredients
For the cauliflower steaks:
- 1 large head cauliflower
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Kosher salt and freshly ground black pepper
For the tahini sauce:
- 3 tablespoons tahini
- 2 tablespoons fresh lemon juice
- 2–3 tablespoons warm water
- 1 small clove garlic, finely grated
- Pinch of kosher salt
For topping:
- 1/3 cup pomegranate seeds
- 2 tablespoons fresh flat-leaf parsley, roughly chopped
- 1 tablespoon extra-virgin olive oil, for drizzling
Method
- Preheat your oven to 450°F (230°C) and line a sheet pan with parchment paper.
- Cut the cauliflower into steaks. Trim the leaves and cut the head in half lengthwise through the core. From each half, cut one or two 1-inch-thick steaks parallel to the cut face, keeping as much of the core in each steak as possible so they hold together. You'll get 2 to 3 good steaks from one head; save any loose florets for snacking or another recipe.
- Brush both sides of each steak with olive oil and season with smoked paprika, garlic powder, salt, and pepper. Place on the prepared sheet pan.
- Roast for 22 to 28 minutes, flipping once halfway through, until both sides are deeply golden brown and a knife slides easily through the thickest part. The edges should be crispy and caramelized. Oven temperatures vary — if your steaks aren't deeply golden at 25 minutes, give them another 3–5 minutes.
- While the cauliflower roasts, make the tahini sauce. Whisk together the tahini, lemon juice, 2–3 tablespoons warm water, garlic, and salt until smooth and drizzleable. Add more water a teaspoon at a time if too thick. Add more water a teaspoon at a time if it's still too thick.
- Plate the steaks and drizzle generously with tahini sauce. Scatter pomegranate seeds and parsley over the top. Finish with a drizzle of olive oil.
Variations & Notes
- Extra Hungry: Serve over a bed of herbed couscous or alongside roasted sweet potatoes. A generous side of hummus doesn't hurt.
- Protein add-on: Crumble seared halloumi (not vegan/dairy-free) or marinated tempeh over the top. A handful of toasted pine nuts adds richness and protein.
- Seasonal swap: When pomegranate isn't in season, use dried cranberries or a drizzle of balsamic reduction.
- Make it a full meal: Pair with a grain salad: farro with roasted vegetables is a great match (farro is wheat — use quinoa to keep the plate gluten-free).
- Storage: Best eaten fresh. Leftover cauliflower steaks can be refrigerated for 2 days; reheat at 400°F (200°C) for 8 to 10 minutes to restore some crispness. Store sauce separately.
