Ingredients

For the roasted beets:
  • 4 medium beets (about 1 1/2 pounds), scrubbed and trimmed
  • 1 tablespoon extra-virgin olive oil
  • Kosher salt and freshly ground black pepper
For the balsamic vinaigrette:
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey (or maple syrup for vegan)
  • 4 tablespoons extra-virgin olive oil
  • Kosher salt and freshly ground black pepper
For the salad:
  • 5 ounces baby arugula (about 6 cups, loosely packed)
  • 2 medium navel oranges, peeled and segmented
  • 1/3 cup shelled pistachios, roughly chopped
  • Flaky sea salt

Method

  1. Preheat your oven to 400°F (200°C). Wrap each beet individually in aluminum foil with a drizzle of olive oil and a pinch of salt.
  2. Roast the beets directly on the oven rack for 45 to 60 minutes, until a knife slides through the center with no resistance. Smaller beets will be done faster; start checking at 40 minutes.
  3. Let the beets rest for 10–15 minutes before handling; open the foil carefully to release steam. Rub the skins off with a paper towel. They should slip right off. Cut into wedges or 1/2-inch-thick rounds.
  4. Make the vinaigrette. Whisk together the balsamic vinegar, Dijon mustard, and honey. Slowly drizzle in the olive oil while whisking until emulsified. Season with salt and pepper. Taste and adjust — if the dressing feels too sharp, add another tablespoon of olive oil.
  5. Assemble the salad. Spread the arugula on a large platter or divide among plates. Arrange the warm beet wedges and orange segments over the greens. Drizzle with the balsamic vinaigrette, scatter the pistachios on top, and finish with a pinch of flaky sea salt.

Variations & Notes

  • Extra Hungry: Add a cup of cooked farro, quinoa, or lentils to make it heartier. Serve with crusty bread.
  • Protein add-on: Top with crumbled goat cheese (makes it vegetarian, not vegan), grilled halloumi, or pan-seared tofu.
  • Shortcut: Use pre-cooked vacuum-packed beets from the grocery store: no judgment. Saves 45 minutes.
  • Sub notes: Blood oranges are spectacular here when in season. Walnuts or toasted almonds can replace pistachios. Spinach or mixed greens work in place of arugula if you prefer less peppery.
  • Storage: Dressed salad doesn't keep well, but roasted beets and vinaigrette can be stored separately for 3–4 days. Roast a big batch of beets on Sunday and use them all week.
