This soup uses shredded rotisserie chicken, a good stock, and whatever vegetables you've got on hand (or whatever's in this recipe — see Variations), all simmered with turmeric until everything turns golden and your kitchen smells like someone who has their life together. The lemon goes in at the very end, right before serving, and it lifts the whole bowl from "warm and comforting" to "wait, this is actually restaurant-good." Ingredients

For the soup:
  • 1 tablespoon extra-virgin olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and sliced into half-moons
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 6 cups chicken bone broth or good-quality stock
  • 2 cups shredded rotisserie chicken (about half a bird)
  • 3 cups baby spinach or chopped kale
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • Fresh dill or parsley, for serving
  • Kosher salt and freshly ground black pepper, to taste

Method

  1. Heat the olive oil in a large Dutch oven or soup pot over medium-high heat.
  2. Add the onion, carrots, and celery, season with a pinch of salt and pepper, and cook for 4–5 minutes, stirring occasionally, until the onion is translucent and the carrots have started to soften.
  3. Add the garlic and turmeric and stir for 30 seconds, until the garlic smells sweet and the mixture turns a deep golden yellow.
  4. Pour in the broth and bring to a boil, then reduce to a steady simmer.
  5. Add the shredded chicken and cook for 8 minutes, letting the flavors meld and the carrots finish softening.
  6. Stir in the spinach or kale and cook: spinach 1–2 minutes until just wilted; kale 3–5 minutes until fully tender and no longer bitter.
  7. Remove from heat and stir in the lemon juice. Taste and adjust salt and pepper.
  8. Ladle into bowls and top with fresh dill or parsley.

Variations & Notes

  • Vegan Swap: Skip the chicken and use vegetable broth. Add 1 can of cannellini beans (drained and rinsed) and an extra cup of vegetables: diced zucchini or green beans work well.
  • Paleo-Friendly Adjustment: Already paleo-friendly as written. Use a clean bone broth without added sugars. Check the rotisserie chicken label — many store-bought birds contain added sugars or non-paleo seasonings; look for a plain-roasted or lemon-herb variety with a clean ingredient list, or use home-roasted chicken.
  • Extra Hungry: Stir in cooked rice, quinoa, or small pasta (gluten-free pasta keeps the tag) during the last 2 minutes. Or serve with a thick slice of crusty sourdough on the side.
  • Substitutions: Any cooked chicken works: leftover grilled, baked, whatever you've got. Frozen spinach (thawed and squeezed dry) can replace fresh. Swap turmeric for a pinch of saffron if you're feeling fancy.
  • Storage: Refrigerate for up to 4 days or freeze for up to 3 months. The soup actually tastes better the next day. Reheat gently on the stove; add a splash of broth if it's thickened up.
