Ingredients

For the smoothie base:
  • 1 large banana, peeled, sliced, and frozen
  • ½ cup canned pure pumpkin purée (not pumpkin pie filling)
  • 1 scoop vanilla protein powder (about 25 grams protein)
  • ½ cup unsweetened coconut milk (carton, not canned)
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Pinch of ground ginger
  • Pinch of ground cloves
  • 1 teaspoon maple syrup or 1–2 pitted Medjool dates (optional, adjust to taste)
For the toppings:
  • 2 tablespoons raw pumpkin seeds (pepitas)
  • 2 tablespoons granola (grain-free or hemp-based preferred)
  • 1 tablespoon almond butter
  • 1 teaspoon hemp seeds

Method

  1. Add the coconut milk and pumpkin purée to a high-speed blender. Stir in the protein powder, cinnamon, nutmeg, ginger, cloves, and maple syrup (if using) until the powder is incorporated into the liquid base. Add the frozen banana slices on top.
  2. Blend on high for 30–45 seconds, using the tamper to push ingredients toward the blade. The mixture should be very thick. More like soft-serve ice cream than a pourable smoothie. If it won't blend, add coconut milk 1 tablespoon at a time. Less liquid is better here.
  3. Scoop the smoothie base into a bowl and smooth the top with the back of a spoon.
  4. Arrange the toppings in rows across the surface: pumpkin seeds, granola, a drizzle of almond butter, and a scatter of hemp seeds. Eat immediately with a spoon.

Variations & Notes

  • Vegan Swap: Use a plant-based vanilla protein powder. Check your granola for honey if strict vegan.
  • Substitutions: Sweet potato purée (cooked and cooled) can replace pumpkin purée: slightly sweeter, same creamy texture. Peanut butter or cashew butter work in place of almond butter.
  • Extra Hungry: Double the base recipe and use a bigger bowl, or add ¼ cup of rolled oats to the blend for extra body.
  • Meal prep trick: Freeze individual portions of sliced banana + pumpkin purée + spices in silicone muffin molds. Pop one out, add to the blender with protein powder and coconut milk, and you've shaved two minutes off an already five-minute recipe.
  • Storage: The blended base does not store well — it will separate and lose its thick texture. For make-ahead convenience, use the freezer-portion method above rather than blending ahead.
