
Cucumber and Smoked Salmon Bites with Lemon-Dill Cream Cheese
Fifteen minutes. That's it. And at the end of those fifteen minutes, you have a plate of something that looks like it was assembled by someone who went to culinary school and also owns a boat. Thick cucumber rounds act as the base, lemon-dill cream cheese is the middle layer, smoked salmon drapes over the top, and a caper and dill frond finish each one. We make these when people come over and we want to seem like we have our lives together. We also make them on random Tuesdays because they're that satisfying as a high-protein, low-effort snack.

Ingredients
For the lemon-dill cream cheese:
- 4 ounces cream cheese, softened (or dairy-free cream cheese)
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh dill, finely chopped, plus small fronds for garnish
- ½ teaspoon lemon zest
- Pinch of fine sea salt
For the bites:
- 2 large English cucumbers
- 8 ounces smoked salmon (lox-style), torn into approximately 24 small pieces
- 2 tablespoons capers, drained
- Freshly cracked black pepper
Method
- In a small bowl, stir together the cream cheese, lemon juice, chopped dill, lemon zest, and salt until smooth and evenly combined.
- Slice the cucumbers into rounds about ¾-inch thick; you want them sturdy enough to hold toppings without flopping. English cucumbers work best because the seeds are small and the skin is thin. You'll get approximately 24 rounds. Lay the rounds on a paper towel and pat dry on both sides, then transfer to a serving platter.
- Arrange the cucumber rounds on a serving platter.
- Spoon or pipe about 1 teaspoon of the lemon-dill cream cheese onto each round, spreading it slightly to create a base layer.
- Drape a piece of smoked salmon over the cream cheese, folding or bunching it so it sits up rather than lying flat.
- Top each bite with 2–3 capers, a small dill frond, and a crack of black pepper.
- Serve immediately, or refrigerate for up to 2 hours before serving (beyond that, the cucumbers begin to release water and the rounds soften). Assemble as close to serving time as possible for the best texture.
Variations & Notes
- Dairy-free swap: Use cashew cream cheese or your preferred dairy-free alternative. Kite Hill and Miyoko's both work well here.
- Everything bagel version: Sprinkle everything bagel seasoning over the cream cheese layer for a New York deli vibe.
- Extra Hungry: Serve alongside a plate of whole-grain crackers or toasted sourdough rounds so people can build bigger bites.
- Substitutions: Trout or any cold-smoked fish works. If capers aren't your thing, thinly sliced red onion or a drop of hot honey are both excellent.
- Vulnerable populations: The honest answer for pregnant guests is that no refrigerated smoked salmon — hot- or cold-smoked — gets a pass from the FDA, because Listeria grows at fridge temperatures. Make a batch of these with canned or shelf-stable salmon (mashed with a squeeze of lemon) for anyone pregnant or immunocompromised; it's genuinely good that way.
- Storage: Assemble right before serving. The cream cheese can be mixed a day ahead and kept in the fridge. On a party spread, these are a perishable platter: put out what will be eaten within 2 hours and keep the rest refrigerated, replenishing as you go.
