Black Bean and Sweet Potato Quesadillas with Mango Salsa

The secret to a whole-food quesadilla that doesn't feel like a compromise? A hot, dry pan and the right filling. Mashed sweet potato acts as the glue here; it gets creamy and sticky when heated, binding the black beans and smoked cheddar into something that holds together when you pick it up. No butter needed on the outside; just a very hot skillet that gets the tortilla blistered and crispy. The mango salsa on the side is bright and absurdly good and takes two minutes with a knife and a bowl. These are weeknight-regular for us, the kind of thing where you eat two standing at the counter and then sit down for two more like a civilized person.

Ingredients

For the mango salsa:
  • 1 ripe mango, diced (about 1 cup)
  • 2 tablespoons red onion, finely diced
  • 1 tablespoon fresh lime juice
  • 1 tablespoon fresh cilantro, chopped
  • Pinch of fine sea salt
For the quesadillas:
  • 1 medium sweet potato, peeled and cut into ½-inch cubes
  • 1 (15-ounce) can black beans, drained and rinsed
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • Fine sea salt, to taste
  • ½ cup shredded smoked cheddar cheese
  • 4 whole grain tortillas (8-inch)

Method

  1. Make the mango salsa: Toss the mango, red onion, lime juice, cilantro, and salt together in a small bowl. Set aside.
  2. Place the sweet potato cubes in a microwave-safe bowl with 2 tablespoons of water. Cover and microwave on high for 4–5 minutes, until fork-tender. Drain and roughly mash with a fork, it doesn't need to be smooth.
  3. Stir the black beans, cumin, and smoked paprika into the mashed sweet potato, stirring vigorously to coat the beans evenly in the spices. Season with salt to taste.
  4. Lay out the tortillas. Divide the sweet potato–bean mixture evenly across one half of each tortilla. Top with the smoked cheddar and fold the tortillas in half.
  5. Heat a large skillet over medium heat: no oil needed. Place 2 quesadillas in the pan and cook for 2–3 minutes per side, pressing gently with a spatula, until the tortilla is deep golden and pulls away from the pan easily and the cheese is melted. Repeat with the remaining quesadillas.
  6. Cut each quesadilla into wedges and serve with the mango salsa on the side.

Variations & Notes

  • Vegan Swap: Use your favorite vegan shredded cheese or skip the cheese entirely: the sweet potato mash is creamy enough to hold things together on its own. Nutritional yeast stirred into the filling adds a cheesy flavor.
  • Paleo-Friendly Adjustment: Use grain-free tortillas (cassava or almond flour based), skip the cheese or use a nut-based cheese alternative, and swap the black beans for shredded chicken or extra sweet potato — beans aren't paleo, so the swap is what earns the label.
  • Extra Hungry: Serve with a side of guacamole and a fried egg on top of each quesadilla. Or double up on the filling and make them extra thick.
  • Substitutions: Butternut squash can replace sweet potato. Regular cheddar or pepper jack work if you can't find smoked cheddar. Frozen mango (thawed) is fine for the salsa year-round.
