Big-Batch Turkey Meatballs (Freeze-Friendly)

These are load-bearing infrastructure. A batch of 40 meatballs takes about two hours from start to freezer bag (including the flash-freeze time), and once they're there, you have three months of optionality. Drop them in tomato sauce and serve over spaghetti squash on Monday. Float them in soup on Wednesday. Reheat four or five, drizzle with tahini and hot sauce, and eat them over rice on Friday. They're seasoned with enough personality to work in almost any context but not so aggressively that they fight with whatever you put them in. Adam goes through about fifteen a week. Ingredients

For the meatballs:
  • 3 pounds ground turkey (93% lean)
  • 1 cup almond flour
  • 3 large eggs, lightly beaten
  • 4 cloves garlic, minced
  • 1 medium yellow onion, finely diced
  • 2 medium zucchini, grated and squeezed dry (about 1½ cups)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Italian seasoning
  • 1½ teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon red pepper flakes
  • 2 teaspoons salt
  • Freshly ground black pepper

Method

  1. Preheat your oven to 400°F (200°C). Line two large rimmed sheet pans with parchment paper and lightly grease with olive oil.
  2. Grate the zucchini on the large holes of a box grater, then gather it in a clean kitchen towel and squeeze out as much liquid as possible: you'll be surprised how much comes out. This step keeps the meatballs from turning soggy.
  3. In a large bowl, combine the ground turkey, almond flour, beaten eggs, garlic, onion, squeezed zucchini, Dijon mustard, Italian seasoning, smoked paprika, cumin, red pepper flakes, salt, and several grinds of black pepper. Mix with your hands until everything is evenly distributed — mix thoroughly but don't go longer than needed.
  4. Using a tablespoon measure or a small cookie scoop, portion the mixture into roughly 40 balls, each about 1½ inches across. Roll them between your palms just enough to hold their shape. Arrange on the prepared sheet pans with a little space between each one.
  5. Bake for 20–25 minutes, rotating the pans halfway through, until the meatballs are golden brown on the outside and cooked through: they should register 165°F (74°C) in the center at the thickest part. They'll firm up as they cool.
  6. Let the meatballs cool completely on the pans. Transfer to a parchment-lined sheet pan and freeze in a single layer for at least 2 hours, or until completely solid (this prevents them from clumping; overnight is fine). Then transfer to freezer bags or airtight containers.

Variations & Notes

  • Vegan Swap: Replace the turkey with 3 (15-ounce) cans of chickpeas, drained and mashed. Swap the eggs for ¼ cup tahini plus 3 tablespoons water. Increase the almond flour to 1½ cups. Bake at 400°F for 25–30 minutes until firm and golden. These are more delicate than the turkey version — handle gently and use a medium cookie scoop for consistent sizing.
  • Extra Hungry: Five meatballs per serving instead of four, served over roasted sweet potatoes or cauliflower rice from later in this section.
  • Three ways to use them: (1) Simmer frozen meatballs in marinara sauce for 25 minutes at a gentle but visible simmer over medium-low heat — no thawing needed; they're done when heated through to 165°F at the center.   • Storage: Refrigerator: 3–4 days. Freezer: 3 months. Reheat from frozen in a 375°F oven for 15–18 minutes, or in sauce straight from the freezer.
