This is the recipe that converts skeptics. Bring these to a party and people will assume they're fancy truffles. Tell them they're made of dates, oats, and almond butter and you'll get a look somewhere between disbelief and betrayal. The raw cacao gives them a deep, rich chocolate note, the dates hold everything together with a caramel sweetness, and the flaky sea salt on top makes the whole thing sing. A batch of 32 fuels a week of pre-gym snacks, mid-afternoon slumps, and desperate post-bedtime treats.

Ingredients

For the energy bites:
  • 1½ cups pitted Medjool dates (about 15 large dates; roughly chopped if very large)
  • 1 cup old-fashioned rolled oats (use certified gluten-free if needed)
  • ¾ cup creamy almond butter (no sugar added)
  • ½ cup raw cacao powder
  • ¼ cup unsweetened shredded coconut
  • 2 tablespoons raw honey (or maple syrup for strictly vegan)
  • 1 tablespoon coconut oil, melted
  • 1 teaspoon vanilla extract
  • ¼ teaspoon fine sea salt
  • Flaky sea salt, for finishing

Method

  1. Add the pitted dates to a food processor and pulse 10–12 times until they form a sticky, chunky paste. If your dates are dry, soak them in warm water for 10 minutes first and drain well.
  2. Add the oats, almond butter, cacao powder, shredded coconut, honey, melted coconut oil, vanilla, and fine sea salt to the food processor.
  3. Process for 30–45 seconds, stopping to scrape down the sides once, until the mixture comes together into a thick, uniform dough that holds its shape when pressed between your fingers. It should be slightly sticky but not wet. Some oat texture is expected and gives these bites a hearty, satisfying chew. For a smoother bite, pulse the oats alone for 15–20 seconds before adding the remaining ingredients.
  4. Using a tablespoon measure or a small cookie scoop, portion the dough and roll each piece between your palms into a firm ball. You should get about 32 bites. Lightly wet your hands if the mixture sticks.
  5. Set the bites on a parchment-lined sheet pan or plate. Press a few flakes of sea salt onto the top of each one.
  6. Refrigerate for at least 30 minutes to firm up. Store in an airtight container in the fridge.

Variations & Notes

  • Peanut butter version: Swap almond butter for natural peanut butter: equally good, slightly different flavor.
  • Extra protein: Add 2 tablespoons of hemp hearts or a scoop of unflavored collagen peptides to the food processor.
  • Nut-free: Use sunflower seed butter in place of almond butter. Coconut is botanically a fruit and is no longer treated as a tree nut in current FDA allergen guidance, but coconut allergy is real — skip the shredded coconut if you're serving anyone who has one.
  • Storage: Keeps in the fridge for up to 10 days (best flavor in the first week). Freezes beautifully for up to 2 months: they thaw in about 10 minutes at room temperature.
  • Kid note: These are a favorite with our daughter. The sweetness comes entirely from whole food. Two real rules for the smallest eaters, though: made with honey these are strictly for kids over one year (use the maple version for a household with a baby), and for toddlers, flatten a bite into a thin disc or crumble it — a firm, round, tablespoon-sized ball is exactly the shape and texture to be careful with, and whole nuts or halved bites are for bigger kids.
